Appetizers, two desserts and zany blueberry muffins
We began this week with tasty zucchini rollups, surprisingly filling with their creamy lime and garlic-infused guacamole. So glad we got to sample them, because they’re a keeper!

Each Friday you’ll find at least five recipes here, maybe six or seven, depending on how the foodie stars aligned. Most are vegetarian, some vegan. Occasionally the Recipe of the Day includes meat or meat stock. YayYay’s is a flexitarian whole-foods kitchen.
For breakfast one morning, and every morning since, we enjoyed the hazelnut blueberry muffins. Mine fell, probably because I added nearly twice as many blueberries as called for in the recipe. But the flavor? Amazing!
The roasted butternut squash tacos with their black bean slaw sit high on my must-try list. And boy am I glad I baked those lemon bars, though I substituted whole wheat flour for the white. Only my mother-in-law, rest her soul, made better, and these were so easy, rich with butter and full of tart lemony flavor.
