No brown sugar? Make it in 5 minutes!

How many times have you jumped up to try a new cookie recipe only to discover rock hard brown sugar in your pantry? Good news! You can make brown sugar in five minutes. Two ingredients. Four utensils. Done.

I’ve made my own for a few years now. So convenient! Start with unsulphured molasses and ordinary table sugar, preferably organic. Molasses? That’s right. Before refining, the sparkling table sugar crystals that many home cooks use contained dark, rich molasses. Adding the syrupy stuff back in produces moist, dense brown sugar.

Make your own brown sugar recipe

  • Servings: Not actually servings, but yield is 1 packed cup

In the beginning, I experimented. Later, much later, I found Rose’s Sugar Bible on Food Arts, which gave me the formula I use today.

  • 1 C Organic white granulated sugar
  • 1/4 or 1/2 C Unsulphured molasses, for light or dark brown sugar, respectively


Measure sugar and molasses into bowl. Mash with fork until molasses is fully incorporated. This takes just a minute or two.

Recipe makes 1 cup packed brown sugar. To prevent drying and hardening, store any unused sugar in a tightly capped jar, such as a Fido jar.

    • I know what you mean. The first time I tried it, years ago, it was one of those forehead-slapping moments. Then I did a little research and, well, here we are today.


    • My pleasure. You might try the apple trick and see if it works on your hard sugar. Slice an apple, lay it on a piece of waxed paper on top of the sugar and seal the bag for a day or two.
