On Sunday, in Using the folding technique for wet, sticky dough, we saw a brief demonstration of this gentle lift-slap-fold method of stretching wet dough.
Here, Babette, of La Cocina de Babette, gives us a long enough demonstration (nearly 18 minutes) that we can really get into the technique, including the best demonstration of the windowpane test I have seen yet. The closeups are excellent.
Thankfully, Babette also gives us a voice-over translation, so we can understand her verbal instructions as well as watch.
