Cultivating the starter: Day 18

For the first time in this cultivation process, I completely missed a feeding. I’m a bit chagrined to admit I fell asleep watching a favorite Friday night television show (New Tricks on Public TV). Woke at 4:30 in the morning. Here’s what my starter looked like after nearly 19 hours since last feeding. You can just see the rise/fall line.

The top has a few large bubbles as well, and is puffy with gasses percolating beneath the surface. The yeasty sourdough scent is stronger, too.

One more day of twice daily feedings, then I set my first loaf sponge. Getting excited and a little nervous. I haven’t had the best of luck with sourdough loaves in the past, but then, I’ve never worked a starter so patiently.
